Abalone Rice Porridge (Jeonbokjuk) and the Water Element

Jeonbokjuk is a gentle rice porridge made with abalone and sesame oil. The tradition reads it as a Water dish with an even nature, so the app offers it in every season.

Why the tradition reads it as Water

Abalone comes from the sea, and the tradition links the sea, saltiness and the colour black with Water (水). In Korea abalone porridge has long been a special dish, the bowl people cook for someone who needs a gentle, comforting meal. Salt, the one seasoning, is the taste of Water as well.

The rice and sesame oil belong to Earth (土). Earth is the element of the centre and of digestion in this system, and a soft grain porridge is its most typical form. So the bowl is Water in flavour, carried on an Earth base that keeps it mild.

Season and body type

Because its nature is even, neither cooling nor warming, the app lists it for all four seasons: spring, summer, autumn and winter. The tradition says even dishes suit everyone, including people whose hot and cold tendencies are balanced. It is a common choice when someone wants something light but filling.

Swaps the app suggests

If an ingredient is missing or does not suit you, the app offers these alternatives, each with its own element:

Ingredients

How to make it

  1. Scrub the abalone with a brush, separate the flesh from the innards, and slice the flesh thinly.
  2. Stir-fry the abalone and the soaked rice in the sesame oil.
  3. Pour in 6 cups of water and simmer on low heat for 30 minutes, stirring as it cooks.
  4. Season with salt.

Questions

Can I make it without abalone?

Yes. The app suggests 4 shiitake mushrooms. That shifts the bowl from Water toward Earth, but it keeps the savoury taste.

Why stir so often?

Rice porridge sticks to the pot easily. Stirring during the 30-minute simmer keeps it smooth and stops the bottom from catching.

Why is it listed for every season?

Its nature is even, so the tradition does not tie it to hot or cold weather.
