Chestnut Rice (Bam-bap): an Autumn Earth Bowl

Sweet, yellow and filling
A peeled chestnut is pale yellow and mildly sweet, the colour and taste the tradition gives to Earth. Rice is an Earth grain too, so the bowl is built around the centre phase, the one associated with nourishment and steadiness.
The three jujubes add a touch of red. Red belongs to Fire, and Fire produces Earth (火生土) in the generating cycle, so the tradition reads the jujubes as warming and supporting the Earth ingredients. A pinch of salt, the taste of Water, brings out the chestnut sweetness.

How to make it
- Wash the rice and soak it for 30 minutes.
- Halve the chestnuts; pit the jujubes and cut them into thin strips.

Can I use pre-cooked vacuum-packed chestnuts?
Yes. They are already soft, so they simply warm through with the rice.
What if I have no chestnuts?
One sweet potato, cubed, keeps the same yellow, sweet Earth character.
Why rest the rice for 10 minutes?
Resting (tteum) lets the steam finish the grains and the chestnuts evenly.
