What the name means

寒 means cold and 露 means dew. Two terms earlier, White Dew (白露) described dew that simply shows up white on the grass. By Cold Dew the dew feels chilly to the touch in the early morning. The calendar watches one thing, dew, and records how it changes over a month.

What changes in nature

In Korea this is the heart of clear autumn weather. Skies are high and dry, nights get cool quickly, and the gap between morning and afternoon temperature is wide. Mountain maples begin turning from the north and from the peaks downward, and in the fields the rice harvest is being finished and threshed.

The classical Chinese almanac lists three five-day signs for this term: wild geese arriving as guests, small birds entering the water to become clams, and chrysanthemums showing yellow flowers. The middle one is poetic folklore rather than biology, but it shows how people once read the season through birds and flowers.

Seasonal foods

Chrysanthemums tie Cold Dew to the Double Ninth festival (重陽, the ninth day of the ninth lunar month), which usually falls close by. In Korea people made hwajeon, small pan-fried rice cakes decorated with chrysanthemum petals, and enjoyed the flowers outdoors. Freshly harvested rice, chestnuts and jujubes also reach the table now; a bowl of chestnut rice is a natural fit for the week.

Bai Juyi's short poem 《暮江吟》 (Evening Song by the River) ends with a ninth-month night: 「可憐九月初三夜,露似真珠月似弓。」 "How lovely, the night of the third of the ninth month: dew like pearls, the moon like a bow." The ninth lunar month is exactly the stretch that Cold Dew opens, and the poem catches the same cold, bright dew.
