Why red means Fire

In the five-element colour scheme red belongs to Fire (火), and a ripe tomato is about as red as a vegetable gets. The app adds that the tomato is juicy and soft, which keeps its Fire gentle rather than sharp. Red bell pepper, the suggested substitute, is chosen for the same red colour.

Eggs bring Earth (土). The app calls them filling Earth protein. In the generating cycle Fire gives birth to Earth (火生土), so the two main ingredients sit next to each other in the cycle: the red Fire of the tomato flows into the yellow Earth of the egg.
